This was one of George Washington's favorites. He and Martha loved to entertain at their beloved Mt Vernon estate. Washington never got to spend as much time there as he would have liked, but he felt that the duty he owed his country was greater than his own wishes and desires. He had great plans for his retirement upon leaving the presidency in 1797, but he never realized many of those dreams as he died in Dec. 1799. This is similar to cornbread, but is much more dense and therefore requires a spoon to serve it.
1 C cornmeal, white or yellow
1-1/2 tsp salt
2 C milk, scalded
2-1/2 tsp baking powder
2 eggs separated
Mix the cornmeal and salt together and stir them into hot milk. Cook over very low heat, stirring all the time, until thick and smooth. Continue cooking for 15 minutes more, stirring occasionally. Cool slightly and stir in baking powder and well beaten egg yolks. The fold in the stiffly beaten egg whites. Turn into a greased casserole or 8 inch square pan. Bake at 375 degrees Fahrenheit for about 35 minutes or until the bread is firm and crust is brown. Serve from baking dish.
