I'm on a quest. My son is going to be starting first grade this fall and he will be eating lunch at school. School lunch is expensive, especially when it is specially catered by an outside company, so I have been trying to come up with fun and tasty ideas that will give him some variety. Our first experiment was this recipe for turkey, apricot pinwheels. I found them in my newest Taste of Home magazine and thought they looked good. They were listed as an after school snack, but I thought that with a few other items, they would pack well for lunch. My son and daughter both loved them. So did the hubs, which is amazing. He wouldn't have even tried them if I had told him the ingredients beforehand, but he loved them. We dipped them in a little ranch dressing, but they are good plain and they taste just as good cold as they do hot.
Spread 1/4 C apricot or peach preserves (I used peach) onto a sheet of puff pastry. ( you can find this at the store in the refrigerator section) Sprinkle with 1/2 tsp ground mustard. Layer with 1/4 lb deli sliced turkey and 1/2 C Monterey Jack cheese. Roll up jelly roll style. Cut into 16 slices and bake at 400 degrees fahrenheit for 15 min. or until browned.
