Baked Ice Cream-Thomas Jefferson

Few people realize that Thomas Jefferson was not only one of the most gifted writers of his time, he was also a brilliant mind, statesmen, engineer and great inventor. He also loved to cook and even invented what we today call Baked Alaska.

1 quart brick, or molded ice cream, very cold

Meringue:

2 egg whites
1/4 tsp cream of tartar
4 Tbsp powdered sugar
1/2 tsp vanilla extract

Have egg whites at room temperature.  Whip with electric mixer along with cream of tartar.  When they form stiff peaks, fold in the sugar and vanilla.  Frost the ice cream and bake in a preheated 350 degree oven for 10-15 minutes or until meringue is lightly browned.  You can also brown the meringue with a hand held acetylene torch.
