Ice Milk

I made this ice milk for Father's Day.  It was a last minute decision and I wasn't about to go to the store on Sunday to get the ingredients I needed to make ice cream.  It is also a nice alternative for those of you who crave something a little less fattening.  You could easily add nuts, fruit, or candy to spruce it up.

1/2  cup  sugar
2 1/2  tablespoons  fat-free, sugar-free vanilla instant pudding mix
2  cups  reduced-fat milk
1  (12-oz.) can evaporated fat-free milk
1/2  cup  egg substitute
2  teaspoons  vanilla extract


Combine sugar and pudding mix in a large bowl. Gradually whisk in milk and remaining ingredients.
Pour milk mixture into freezer container of a 1 1/2-qt. electric ice-cream maker, and freeze according to manufacturer's instructions. (Instructions and times will vary.)
