I was looking for a quick and easy bread to go with dinner last night. I found this and with a few alterations was able to make a hearty and delicious bread. I am thrilled to have this in my bread repertoire because it is so easy, but it tastes like it took hours to make. The best part was the leftovers which the kids had for breakfast this morning.
4 cups whole wheat flour
2 cups all-purpose flour
2 cups packed brown sugar
1/2 cup honey
2 teaspoons baking soda
1 teaspoon salt
2-1/2 cups buttermilk
2 eggs, lightly beaten
In a large bowl, combine the flours, sugar, honey, baking soda and salt. Stir in buttermilk and eggs just until moistened.
Pour into two 9-in. x 5-in. loaf pans coated with cooking spray. Bake at 350° for 50-60 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely.
